Toppings
- ½ cup corn (grilled or canned)
- ½ cup black beans (optional)
- ½ cup shredded lettuce or cabbage
- ¼ cup shredded cheese (optional)
- 2 tbsp sour cream or Greek yogurt
- Fresh cilantro
- Pickled onions (optional)
Instructions
Preheat oven to 200°C (400°F).
Toss sweet potatoes with olive oil, salt, paprika, garlic powder, and pepper.
Spread on a baking tray and roast for 25–30 minutes until tender and crispy at the edges.
Heat oil in a pan over medium heat.
Add chicken, season with salt, paprika, garlic powder, and pepper.
Cook until golden and fully cooked (6–8 minutes).
Add BBQ sauce and simmer for 2–3 minutes until coated and sticky.
Add roasted sweet potatoes as the base.
Top with BBQ chicken, corn, beans, lettuce, and cheese.
Drizzle with sour cream or Greek yogurt.
Garnish with cilantro and pickled onions.
Serve warm.
