- 4 large russet potatoes
- 2 tbsp olive oil

- ½ cup black beans, drained and rinsed
- ½ cup corn kernels
- ¼ cup diced jalapeños
- ¼ cup diced red onion
- 2 tbsp sliced black olives
- 2 green onions, sliced

- ½ cup sour cream
- ½ cup diced tomatoes
- ¼ cup fresh cilantro, chopped
- ¼ cup guacamole
- Salsa, for serving
Instructions
- Bake the potatoes:
Preheat your oven to 400°F (200°C). Wash and dry the potatoes, then prick them several times with a fork. Rub with olive oil and sprinkle with salt. Bake for 45–55 minutes, or until tender. - Prepare the skins:
Allow the potatoes to cool slightly, then cut each potato in half lengthwise. Scoop out most of the potato flesh, leaving about ¼ inch attached to the skin. Save the potato flesh for another recipe. - Crisp the skins:
Brush the inside and outside of the potato skins with olive oil. Sprinkle with garlic powder, paprika, and black pepper. Place them skin-side down on a baking sheet and bake for 10 minutes. Flip and bake for another 5–10 minutes, until crisp. - Add the filling:
Sprinkle each potato skin with shredded cheddar cheese. Add black beans, corn, jalapeños, red onion, and black olives. - Melt the cheese:
Return the potato skins to the oven and bake for 5–7 minutes, until the cheese is completely melted and bubbly. - Add fresh toppings:
Remove from the oven and top with sour cream, diced tomatoes, green onions, cilantro, and guacamole. - Serve:
Serve immediately with your favorite salsa on the side.
