Low-Carb Cheeseburger Salad Bowls

Low-Carb Cheeseburger Salad Bowls

  • Author: David Andersson
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

At its heart, this low-carb cheeseburger salad bowls recipe takes every element of a double cheeseburger and reassembles it over a bed of crunchy greens. Instead of hiding the ingredients inside bread, you showcase savory ground beef, sharp cheddar, juicy tomatoes, and briny pickles in a vibrant bowl.

Ingredients

Scale

For the Beef

  • 1 lb (450 g) ground beef
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • 1 tbsp olive oil

For the Salad

  • 6 cups chopped romaine or iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • ½ cup dill pickles, sliced
  • ½ small red onion, thinly sliced
  • 1 cup shredded cheddar cheese
  • ½ avocado, diced, optional
  • 2 tbsp chopped fresh parsley, optional

For the Burger Sauce

  • ½ cup mayonnaise
  • 2 tbsp sugar-free ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp finely chopped pickles or sugar-free relish
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Black pepper, to taste

Instructions

  • Make the sauce: Whisk together mayonnaise, sugar-free ketchup, mustard, chopped pickles, garlic powder, paprika, and black pepper. Refrigerate until ready to serve.
  • Cook the beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and break it apart with a spoon.
  • Season: Add salt, pepper, garlic powder, onion powder, and smoked paprika. Cook for 7–10 minutes, stirring occasionally, until the beef is browned and fully cooked.
  • Prepare the vegetables: While the beef cooks, chop the lettuce, tomatoes, pickles, onion, and avocado.
  • Build the bowls: Divide the lettuce among four bowls. Top with cooked beef, shredded cheddar, tomatoes, pickles, onions, and avocado.
  • Finish: Drizzle generously with burger sauce and garnish with fresh parsley if desired.

Notes

For an extra cheeseburger flavor, top each bowl with crispy cooked beef-bacon-style pieces, extra pickles, or a sprinkle of sesame seeds. Serve immediately while the beef is warm and the vegetables remain crisp.
