Description

A traditional Maine lobster roll is a chilled seafood sandwich consisting of cooked meat lightly coated in mayonnaise and tucked into a grilled, split-top bun. The foundation of this dish relies on the natural sweetness of cold-water lobsters, which are celebrated for their firm, juicy texture and refined ocean taste.

  • lb (680 g) cooked lobster meat, chilled and roughly chopped
  • ¼ cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp celery, finely diced
  • ½ tsp Dijon mustard, optional
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 4 split-top hot dog buns
  • 3 tbsp unsalted butter, softened
  • 1 tbsp fresh parsley, chopped, for garnish
  • Lemon wedges, for serving

Instructions

  • Prepare the lobster: Make sure the cooked lobster meat is well drained and chilled. Cut it into bite-sized chunks, keeping some larger pieces for texture.
  • Make the dressing: In a bowl, combine mayonnaise, lemon juice, chives, celery, Dijon mustard, salt, and black pepper.
  • Combine: Gently fold the lobster into the dressing. Avoid overmixing so the lobster remains chunky.
  • Toast the buns: Spread the outside of each bun with butter. Heat a skillet over medium heat and toast the buns for about 2–3 minutes per side, until golden and lightly crisp.
  • Fill the rolls: Divide the lobster mixture evenly among the toasted buns.
  • Serve: Garnish with fresh parsley and serve immediately with lemon wedges.

Notes

For a true Maine-style lobster roll, keep the mayonnaise light—the lobster should remain the star. Chilling the lobster mixture for about 15–20 minutes before serving also helps the flavors come together.
