Description
The Marry Me Butter Bean Skillet is a modern vegetarian twist on the famous Marry Me Chicken. Instead of poultry, the star of the show is the butter bean, also known as the lima bean. These are not the mushy, uninspired beans you might remember from childhood cafeterias. When prepared in this manner, butter beans become tender, silky morsels that soak up the surrounding flavors like a sponge.

- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 small onion, diced
- 1 tsp Italian seasoning
- ½ tsp chili flakes (optional)
- 1 cup vegetable broth
- 1 cup coconut milk or heavy cream
- 1 can (15 oz) butter beans, drained and rinsed
- ⅓ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- ¼ cup grated parmesan or vegan parmesan
- Salt and black pepper, to taste
- Fresh basil, for garnish
Instructions
1. Sauté the Aromatics
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook for 3–4 minutes until soft.
- Stir in garlic, Italian seasoning, and chili flakes.
2. Build the Sauce
- Pour in vegetable broth and coconut milk (or cream).
- Stir in sun-dried tomatoes.
3. Add the Beans
- Add butter beans and simmer for 8–10 minutes until the sauce thickens slightly.
4. Finish the Skillet
- Stir in spinach and parmesan.
- Cook until spinach wilts and the sauce becomes creamy.
