Instructions

1. Sauté the Aromatics

2. Build the Sauce

  • Pour in vegetable broth and coconut milk (or cream).
  • Stir in sun-dried tomatoes.

3. Add the Beans

  • Add butter beans and simmer for 8–10 minutes until the sauce thickens slightly.

4. Finish the Skillet

  • Stir in spinach and parmesan.
  • Cook until spinach wilts and the sauce becomes creamy.
