- 2 cups cooked chicken, shredded or finely chopped
- ½ cup sun-dried tomatoes, finely chopped
- 4 oz (115 g) cream cheese, softened
- ¼ cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- ¼ tsp red pepper flakes, optional
- ¼ tsp black pepper
- ¼ tsp salt, or to taste
- 2 tbsp fresh basil or parsley, chopped
For the pastry
- 1 package (about 17.3 oz / 490 g) frozen puff pastry, thawed
- 1 egg
- 1 tbsp water
- 1 tbsp grated Parmesan, for topping
- Sesame seeds or Italian herbs, optional
Instructions
- Prepare the filling: In a bowl, combine the chicken, sun-dried tomatoes, cream cheese, heavy cream, Parmesan, garlic, Italian seasoning, paprika, red pepper flakes, salt, and black pepper. Mix until creamy and well combined. Fold in the fresh basil or parsley.
- Prepare the pastry: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Roll out the puff pastry and cut it into 6 equal rectangles.
- Fill: Place a generous spoonful of chicken filling in the center of each pastry rectangle, leaving a border around the edges.
- Seal: Fold the pastry over the filling to form pockets. Press the edges firmly with a fork to seal.
- Egg wash: Beat the egg with 1 tablespoon of water. Brush each pocket with the egg wash and sprinkle with Parmesan and optional sesame seeds or herbs.
- Bake: Place the pockets on the prepared baking sheet and bake for 18–22 minutes, or until puffed and deeply golden brown.
- Rest and serve: Let them cool for about 5 minutes before serving.
