Description

A Matcha Mochi Ice Cream Sandwich is a unique dessert that pairs two essential elements: mochi and ice cream. Mochi is a Japanese dessert made from glutinous rice, which is pounded into a sticky dough. In this recipe, the chewy mochi forms the outer wrapper, and the matcha ice cream serves as the creamy filling. It’s a delicious fusion of textures and flavors that melt in your mouth, providing a delightful experience with every bite. These mochi ice cream sandwiches are not only a treat for the stomach but also a visually appealing dish that makes an impressive addition to any dinner party or casual gathering.

Ingredients

Scale

For the mochi wrapper:

  • 1 cup mochiko (sweet rice flour)

  • ¾ cup water

  • ¼ cup sugar

  • 1 tsp matcha powder (culinary grade)

  • Potato starch or cornstarch (for dusting)

For the filling:

  • 1 pint matcha ice cream (or vanilla, strawberry, or black sesame for variation)

Instructions

1. Prep the ice cream

  • Soften ice cream slightly, then spread it into a parchment-lined 8×8-inch baking dish.

  • Freeze until firm, about 2–3 hours.

  • Once solid, cut into squares or rounds (cookie cutter works well). Keep frozen.

2. Make the mochi wrapper

  1. In a microwave-safe bowl, whisk mochiko, sugar, matcha, and water until smooth.

  2. Cover loosely with plastic wrap. Microwave for 1 minute, stir, then microwave again for 1–2 more minutes until thick and sticky.

  3. Dust a clean surface with potato starch. Transfer hot mochi onto it, dusting generously to prevent sticking.

  4. Roll out gently to about â…›-inch thickness. Let cool slightly.

3. Assemble sandwiches

  1. Cut mochi into squares (or circles if you prefer).

  2. Place one piece of frozen ice cream between two mochi squares, pressing edges gently to seal.

  3. Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.

Notes

For extra texture, lightly dust the mochi with cornstarch to prevent sticking. You can also roll the edges in toasted sesame seeds or crushed pistachios for a fun, nutty twist
