Instructions
1. Prep the ice cream

Soften ice cream slightly, then spread it into a parchment-lined 8×8-inch baking dish.

Freeze until firm, about 2–3 hours.

Once solid, cut into squares or rounds (cookie cutter works well). Keep frozen.
2. Make the mochi wrapper

In a microwave-safe bowl, whisk mochiko, sugar, matcha, and water until smooth.

Cover loosely with plastic wrap. Microwave for 1 minute, stir, then microwave again for 1–2 more minutes until thick and sticky.

Dust a clean surface with potato starch. Transfer hot mochi onto it, dusting generously to prevent sticking.

Roll out gently to about ⅛-inch thickness. Let cool slightly.
3. Assemble sandwiches

Cut mochi into squares (or circles if you prefer).

Place one piece of frozen ice cream between two mochi squares, pressing edges gently to seal.

Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
Notes
For extra texture, lightly dust the mochi with cornstarch to prevent sticking. You can also roll the edges in toasted sesame seeds or crushed pistachios for a fun, nutty twist
