Description
At its heart, the mini shawarma sliders recipe is a creative culinary fusion. It takes the deeply spiced, roasted meat traditions of the Middle East and marries them with the American concept of mini slider sandwiches. Traditional shawarma consists of thinly sliced meat—such as chicken, lamb, beef, or turkey—stacked in a cone shape on a vertical rotisserie, where it slowly roasts while turning. The cook shaves off crispy, succulent outer layers of meat to stuff into pita pockets or flatbreads alongside garlic paste and pickles.
Ingredients
For the Chicken Shawarma
- 500 g boneless chicken thighs or breast, thinly sliced
- 2 tbsp plain yogurt
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp ground coriander
- ½ tsp turmeric
- ½ tsp black pepper
- ½ tsp salt
- ¼ tsp cinnamon
- ¼ tsp cayenne pepper, optional
For the Garlic Sauce
- ½ cup mayonnaise
- 2 tbsp plain yogurt
- 1 garlic clove, finely minced
- 1 tsp lemon juice
- Pinch of salt
For the Sliders
- 12 mini slider buns or dinner rolls
- Lettuce, shredded
- 1 tomato, thinly sliced
- ½ cucumber, thinly sliced
- Pickles, sliced
- 2 tbsp melted butter
- 1 tbsp sesame seeds, optional
Instructions
- Marinate the chicken: Combine yogurt, lemon juice, olive oil, garlic, and all the spices in a bowl. Add the sliced chicken and mix well. Cover and marinate for at least 30 minutes.
- Make the sauce: Mix mayonnaise, yogurt, garlic, lemon juice, and salt until smooth. Refrigerate until ready to use.
- Cook the chicken: Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 7–10 minutes, stirring occasionally, until browned and fully cooked.
- Prepare the buns: Slice the slider buns in half without separating them completely. Lightly brush the tops with melted butter and sprinkle with sesame seeds if desired.
- Assemble: Spread garlic sauce on the buns. Add lettuce, chicken shawarma, tomato, cucumber, and pickles.
- Serve: Close the sliders and serve warm. For a party-style presentation, arrange them on a platter and secure each slider with a small toothpick.
