Description
When you hear “poke cake,” think of a baked cake where you intentionally poke holes into it—then fill those holes with delicious liquid toppings so every bite is extra moist and flavour-filled. The term comes from the technique: you poke the cake.
Ingredients
Chocolate Cake

1 cup all-purpose flour

1 cup granulated sugar

¼ cup unsweetened cocoa powder

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

1 egg
-
½ cup milk (or buttermilk)

¼ cup vegetable oil

1 tsp vanilla extract
-
½ cup hot water or hot coffee (for richer flavor)
Poke Filling
-
1 cup marshmallow fluff (or marshmallow creme)

2–3 tbsp heavy cream or milk (to thin slightly)
Graham Crumb Layer
-
¾ cup crushed graham crackers
-
2 tbsp melted butter
-
1 tbsp brown sugar
-
Pinch of salt
Topping
-
1 cup mini marshmallows
-
½ cup chocolate chips or melted chocolate
-
Optional: extra graham crumbs, Hershey bar squares, or toasted marshmallows on top
Instructions
1. Bake Cake

Preheat oven to 350°F (180°C).

Line or grease a 12-cup muffin pan (or 9×9 pan).

In a bowl, whisk all dry ingredients.

Add egg, milk, oil, and vanilla. Mix until smooth.

Stir in hot water or coffee last — batter will be thin.

Bake cupcakes 16–18 mins (or sheet cake 22–25 mins), until toothpick comes out clean.
2. Poke & Fill

While still warm, poke 4–5 holes in each cupcake using a straw or skewer.

Mix marshmallow fluff with cream so it’s pourable.

Spoon or pipe marshmallow filling into holes (let it sink in).
3. Graham Layer

Mix graham crumbs, melted butter, sugar, and salt.

Sprinkle or press gently on top of each cake while still slightly warm.
4. Finish with Toasted Marshmallow + Chocolate

Top each cake with mini marshmallows.

Broil 1–2 minutes or hit with a kitchen torch until toasted.

Melt chocolate and drizzle, or add a chunk of chocolate that melts from the warmth.
Notes
