Description

Mississippi Mud Pie Cups with Espresso Cream is a individual-portion adaptation of the iconic American chocolate pie. Traditional Mississippi mud pie is known for its multi-layered approach to chocolate, typically featuring a cookie crust, a dense brown-butter or custard chocolate center, and a fluffy top layer.

For the crust

  • 200 g chocolate sandwich cookies or chocolate wafer cookies, finely crushed
  • 5 tbsp (70 g) unsalted butter, melted
  • 1 tbsp granulated sugar
  • Pinch of salt

For the chocolate filling

  • 170 g semisweet chocolate, finely chopped
  • ½ cup (120 ml) heavy cream
  • ¼ cup (50 g) granulated sugar
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 2 large eggs
  • Pinch of salt

For the espresso cream

  • 1 cup (240 ml) cold heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp instant espresso powder
  • ½ tsp vanilla extract

For garnish

  • Chocolate shavings or cocoa powder
  • Optional: crushed chocolate cookies

Instructions

  • Prepare the crust: Preheat the oven to 175°C (350°F). Mix the crushed cookies, melted butter, sugar, and salt until evenly combined.
  • Divide the mixture among 8 small oven-safe ramekins or muffin cups, pressing firmly into the bottoms.
  • Bake for 6–8 minutes. Let cool slightly.
  • Make the filling: Place chocolate, cream, sugar, and butter in a heatproof bowl. Melt gently over a double boiler or in short microwave intervals, stirring until smooth.
  • Whisk in the vanilla and salt. Allow the mixture to cool for a few minutes, then whisk in the eggs one at a time.
  • Pour the chocolate mixture over the crusts, filling each cup about three-quarters full.
  • Bake at 175°C (350°F) for 12–16 minutes, until the edges are set but the centers still have a slight jiggle.
  • Cool to room temperature, then refrigerate for at least 1 hour.
  • Make the espresso cream: Dissolve the espresso powder in the vanilla. Beat the cold heavy cream and powdered sugar until soft peaks form. Add the espresso mixture and beat until medium peaks form.
  • Top each chilled mud pie cup with espresso cream and garnish with chocolate shavings or cocoa powder.

Notes

For the best texture, don’t overbake the chocolate filling—the center should remain slightly soft and fudgy.
