Instructions
1. Prepare dry mix

2. Prepare wet mix
- In another bowl, whisk eggs, oil, and vanilla.
3. Combine
- Add wet ingredients into dry ingredients and mix gently.
4. Add fruits & veggies
- Fold in carrots, apple, raisins, pineapple, nuts, and coconut.
5. Bake
- Spoon batter into muffin cups.
- Bake at 180°C (350°F) for 20–25 minutes until golden.
6. Cool & serve
