Description

A Moroccan Chickpea & Sweet Potato Tagine is a traditional Moroccan dish cooked in a special clay pot called a “tagine.” The tagine’s shape allows for even cooking, making it perfect for stews and braises. The dish typically combines vegetables, legumes, dried fruits, and an array of aromatic spices, creating a flavorful, rich stew. In this version, sweet potatoes and chickpeas form the base, simmered together with a mix of warming spices like cumin, coriander, paprika, cinnamon, and turmeric. The addition of dried apricots adds a touch of sweetness, while the broth ties everything together into a comforting, soul-warming dish.

  • 2 tbsp olive oil

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1-inch piece fresh ginger, grated

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp smoked paprika

  • ½ tsp ground cinnamon

  • ½ tsp turmeric

  • ¼ tsp cayenne pepper (optional, for heat)

  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes

  • 1 red bell pepper, chopped

  • 1 (14 oz) can diced tomatoes

  • 1 (14 oz) can chickpeas, drained and rinsed

  • 2 cups vegetable broth (or water)

  • ½ cup dried apricots, chopped (or golden raisins)

  • Salt & pepper, to taste

  • Fresh cilantro or parsley, chopped (for garnish)

  • Toasted almonds or sesame seeds (optional, for crunch)


Instructions

  1. Sauté the aromatics

    • Heat olive oil in a large pot or Dutch oven over medium heat.

    • Add onion, garlic, and ginger. Cook for 4–5 minutes until softened and fragrant.

  2. Bloom the spices

    • Stir in cumin, coriander, paprika, cinnamon, turmeric, and cayenne. Cook for 1 minute to release flavors.

  3. Add vegetables & broth

    • Add sweet potatoes, bell pepper, tomatoes, chickpeas, broth, and apricots.

    • Season with salt and pepper. Stir well.

  4. Simmer

    • Bring to a boil, then reduce heat to low.

    • Cover and simmer for 25–30 minutes, stirring occasionally, until sweet potatoes are tender and sauce thickens slightly.

  5. Finish & serve

    • Taste and adjust seasoning.

    • Garnish with fresh cilantro/parsley and, if desired, sprinkle with toasted almonds or sesame seeds.

Notes

Serve this fragrant tagine with fluffy couscous, quinoa, or warm flatbread to soak up the flavorful sauce. For extra richness, garnish with toasted almonds or a dollop of Greek yogurt.
