Description

If you are unfamiliar with orzo, you might mistake it for rice at first glance. However, orzo is actually a small, seed-shaped pasta. When prepared in a one-pan style, it behaves almost like a risotto but without the constant stirring and labor-intensive process. One-Pan Lemon Orzo with Shrimp is a Mediterranean-inspired dish that highlights the natural sweetness of succulent shrimp against a backdrop of garlic, lemon, and a hint of cream.


Ingredients

  • 250g (8 oz) shrimp, peeled & deveined
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream (optional for creaminess)
  • Juice and zest of 1 lemon
  • 1/4 cup grated Parmesan cheese
  • 1 cup spinach (optional)
  • Salt and black pepper, to taste
  • 1/2 tsp chili flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the shrimp
    Heat 1 tbsp olive oil in a large pan over medium heat. Season shrimp with salt and pepper, then cook for 1–2 minutes per side until pink. Remove and set aside.
  2. Sauté aromatics
    In the same pan, add remaining olive oil and garlic. Cook for about 30 seconds until fragrant.
  3. Toast the orzo
    Add the orzo and stir for 1–2 minutes to lightly toast it.
  4. Simmer
    Pour in broth and bring to a gentle simmer. Cook for 8–10 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
  5. Make it creamy & zesty
    Stir in cream (if using), lemon juice, zest, and Parmesan cheese.
  6. Add greens & shrimp
    Mix in spinach until wilted, then return shrimp to the pan. Stir everything together and cook for another 1–2 minutes.
  7. Finish & serve
    Taste and adjust seasoning. Garnish with parsley and chili flakes if desired.
