Description

Instructions
- Prepare the sauerkraut:
Drain the sauerkraut thoroughly and gently squeeze out excess moisture. This helps keep the sandwich from becoming soggy. - Assemble the sandwiches:
Spread Russian or Thousand Island dressing on one side of each slice of rye bread. Add a layer of Swiss cheese, pastrami, and sauerkraut. Add a little Dijon mustard if desired, then top with another slice of bread. - Butter the bread:
Spread softened butter evenly over the outside of each sandwich. - Grill:
Heat a skillet or griddle over medium-low heat. Place the sandwiches in the skillet and cook for about 3–4 minutes per side, pressing gently with a spatula, until the bread is golden and crisp and the cheese is melted. - Serve:
Remove from the skillet, slice in half, and serve immediately with pickles, potato chips, or extra dressing on the side.
