Ingredients
- 4–5 plain rice cakes (crushed)
- ½ cup peanut butter
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 cup dark or milk chocolate chips
- 1 tsp coconut oil (optional, for smoother chocolate)
- Pinch of salt
Instructions
- Prepare base
Crush rice cakes into small pieces and place in a bowl. - Mix peanut butter layer
Add peanut butter, honey/maple syrup, vanilla, and salt. Mix until sticky and well combined. - Combine
Stir crushed rice cakes into the peanut butter mixture until fully coated. - Press into pan
Line a small tray or dish with parchment paper. Press mixture evenly into it. - Melt chocolate
Melt chocolate chips (and coconut oil if using) until smooth. - Top & chill
Pour chocolate over the base and spread evenly. Refrigerate for 1–2 hours until firm. - Slice & serve
Cut into bars and enjoy!
