Instructions
- Prepare the crust:
Mix crushed biscuits with melted butter and honey. Press firmly into a tart pan to form the base. Refrigerate for 20–30 minutes until set. - Make the filling:
Blend the pitaya until smooth. Add cream cheese (or yogurt), coconut cream, sweetener, lemon juice, and vanilla. Blend again until creamy and vibrant pink. - Assemble:
Pour the filling over the chilled crust and smooth the top. - Chill:
Refrigerate for at least 3–4 hours (or overnight) until firm. - Serve:
Garnish with your favorite toppings, slice, and enjoy!
