You make it by combining chilled milk with ice cubes. You add sweet pistachio syrup. You pour strong espresso shots over the top. Floating above this drink is a velvety layer of flavored cold foam. Cold foam is heavy cream and milk whipped together cold. Whipping incorporates air into the liquids. This forms a stable, pourable cloud. It sits gracefully atop cold liquids. You sip the drink through the top layer. The sweet, nutty cream blends effortlessly with dark coffee. It creates a smooth balance of temperature and texture.
Ingredients
For the Iced Latte
- 2 shots espresso, cooled
- ¾ cup (180 ml) cold milk
- 1–2 tbsp pistachio syrup
- 1 cup ice
- 1 tbsp chopped pistachios, optional
For the Pistachio Cold Foam
- ¼ cup (60 ml) cold heavy cream
- 2 tbsp cold milk
- 1 tbsp pistachio syrup
- ½ tsp vanilla extract
- Pinch of salt
Instructions
- Make the cold foam:
Add heavy cream, milk, pistachio syrup, vanilla, and salt to a small jar or milk frother. Froth for 30–60 seconds, until thick, creamy, and foamy but still pourable. - Prepare the latte:
Fill a tall glass with ice. Add the pistachio syrup and cold milk, then pour in the cooled espresso. Stir gently to combine. - Add the cold foam:
Spoon or pour the pistachio cold foam generously over the top of the iced latte. - Garnish:
Sprinkle with finely chopped pistachios or a tiny dusting of pistachio powder, if desired.
