For the Salad
- 12 oz elbow macaroni
- 2 cups smoked beef brisket, chopped or shredded
- 1 cup cheddar cheese, cubed
- ½ cup celery, diced
- ½ cup red bell pepper, diced
- ¼ cup red onion, finely diced
- ¼ cup dill pickles, chopped
- 2 green onions, sliced
- 2 tbsp fresh parsley, chopped
For the Dressing
- 1 cup mayonnaise
- 2 tbsp sour cream
- 1 tbsp Dijon mustard
- 1 tbsp barbecue sauce
- 1 tsp apple cider vinegar
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp black pepper
- ½ tsp kosher salt (or to taste)
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the elbow macaroni until al dente according to package directions.
- Drain and rinse under cold water until completely cooled.
2. Make the Dressing
- In a large bowl, whisk together the mayonnaise, sour cream, Dijon mustard, barbecue sauce, apple cider vinegar, smoked paprika, garlic powder, onion powder, black pepper, and salt until smooth.
3. Assemble the Salad
- Add the cooled macaroni, chopped brisket, cheddar cheese, celery, red bell pepper, red onion, dill pickles, green onions, and parsley to the bowl.
- Toss gently until everything is evenly coated with the dressing.
4. Chill
- Cover and refrigerate for at least 1 hour to allow the flavors to blend.
5. Serve
- Stir before serving and garnish with extra parsley, sliced green onions, or a light sprinkle of smoked paprika if desired.
