Description
The Poison Apple Cranberry Meatballs recipe is a festive appetizer featuring handmade meatballs simmered in a shimmering fruit glaze. While traditional meatball appetizers rely on standard barbecue sauce or canned grape jelly, this unique creation uses real fruit juices, whole cranberry sauce, diced fresh apples, and aromatic spices to build a complex, layered flavor profile.
Ingredients
For the meatballs
-
500 g ground beef or ground chicken
-
½ cup breadcrumbs
-
1 small egg
-
¼ cup finely chopped onion
-
2 cloves garlic, minced
-
1 teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon paprika
-
1 tablespoon chopped parsley
-
1 tablespoon olive oil, for cooking
For the poison apple cranberry glaze
-
1 cup cranberry juice
-
½ cup cranberry sauce
-
½ cup apple juice
-
1 small apple, peeled and finely diced
-
2 tablespoons brown sugar
-
1 tablespoon apple cider vinegar
-
1 teaspoon soy sauce
-
½ teaspoon ground cinnamon
-
1 teaspoon cornstarch mixed with 1 tablespoon water
-
A pinch of red food coloring (optional, for a deeper ruby-red color)
Instructions
1. Prepare the meatball mixture. In a large bowl, combine the ground meat, breadcrumbs, egg, onion, garlic, salt, pepper, paprika, and parsley. Mix gently until combined.
2. Shape the meatballs. Roll the mixture into approximately 20–24 small meatballs, each about 2.5 cm wide.
3. Brown the meatballs. Heat olive oil in a large skillet over medium heat. Cook the meatballs in batches for 6–8 minutes, turning regularly until browned on the outside. Transfer to a plate.
4. Make the cranberry-apple glaze. In the same skillet, add cranberry juice, cranberry sauce, apple juice, diced apple, brown sugar, apple cider vinegar, soy sauce, and cinnamon. Stir and bring to a gentle simmer.
5. Thicken the sauce. Simmer for 5–7 minutes until the apples soften and the sauce begins to reduce. Stir in the cornstarch slurry and cook for another 1–2 minutes until glossy. Add optional red food coloring if desired.
6. Finish cooking the meatballs. Return the browned meatballs to the skillet. Toss them in the glaze and simmer for 8–10 minutes, or until cooked through. Ground beef should reach an internal temperature of 71°C (160°F); ground chicken should reach 74°C (165°F).
7. Serve. Arrange the meatballs on a platter and spoon the ruby-red cranberry-apple glaze over them. Garnish with finely chopped parsley or thin apple slices.
Notes
Keep cooked meatballs refrigerated within two hours of cooking, and reheat leftovers thoroughly before serving.
