  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup toasted walnuts or pistachios
  • Fresh mint or parsley, chopped

For the Pomegranate Dressing

  • ¼ cup pomegranate juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

1. Marinate the Steak

In a bowl, combine olive oil, garlic, cumin, smoked paprika, oregano, lemon juice, salt, and pepper.

Rub the mixture over the steak and let it marinate for 15–30 minutes.

2. Cook the Steak

Heat a grill pan or skillet over medium-high heat.

Cook the steak for 4–5 minutes per side for medium-rare, or until your preferred doneness.

Rest the steak for 5–10 minutes, then slice thinly against the grain.

3. Prepare the Dressing

Whisk together pomegranate juice, olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until combined.

4. Assemble the Salad

Arrange greens in a large serving bowl.

Top with sliced steak, pomegranate seeds, cucumber, tomatoes, red onion, feta, walnuts, and fresh herbs.

5. Serve

Drizzle with pomegranate dressing just before serving.
