Description
The concept behind Prebiotic Soda Float Popsicles is wonderfully simple yet remarkably clever. At its core, this frozen dessert reimagines the historic soda float—a beloved creation traditionally made by scooping vanilla ice cream directly into a glass of bubbly root beer or fruit-flavored cola. Instead of using heavy cream, refined sugars, and artificial syrups, this modern recipe blends gut-supportive prebiotic soda with protein-rich vanilla Greek yogurt and natural sweeteners.
Ingredients
Scale
- 1 can (12 oz) prebiotic soda (cherry, orange, strawberry, or root beer flavor)
- 1 cup vanilla Greek yogurt
- 2 tablespoons honey or maple syrup (optional)
- 1 teaspoon vanilla extract
- ½ cup fresh berries or sliced fruit (optional)
Instructions
- In a mixing bowl, whisk together the Greek yogurt, vanilla extract, and honey or maple syrup until smooth.
- Slowly pour in the prebiotic soda, stirring gently to keep some of the carbonation.
- Fold in the fresh berries or fruit, if using.
- Pour the mixture evenly into popsicle molds, leaving a little space at the top for expansion.
- Insert popsicle sticks and freeze for at least 6 hours, or until completely solid.
- To unmold, run the molds under warm water for 10–15 seconds and gently pull out the popsicles.
