Description
At its heart, Puff Pastry Asparagus and Gruyère Tarts is a savory open-faced French-style tart that highlights simple seasonal ingredients. The base relies on a crisp sheet of laminated puff pastry dough that expands into hundreds of golden layers when baked.
Ingredients
For the tarts
-
1 sheet (about 250–320 g) frozen puff pastry, thawed
-
250 g (about ½ lb) fresh asparagus, woody ends trimmed
-
150 g (1½ cups) Gruyère cheese, freshly grated
-
1 large egg, beaten (for egg wash)
-
1 tbsp olive oil
-
1 garlic clove, finely minced
-
1 tsp fresh lemon zest
-
1 tbsp fresh lemon juice
-
½ tsp salt, or to taste
-
¼ tsp freshly ground black pepper
-
1 tsp fresh thyme leaves (optional)
Optional finishing touches
-
1 tbsp grated Parmesan cheese
-
1 tsp honey or balsamic glaze
-
Fresh thyme or chopped parsley
-
A pinch of red pepper flakes
Instructions
1. Prepare the asparagus
Preheat the oven to 200°C (400°F). Wash and dry the asparagus thoroughly, then trim off the woody ends. Toss with olive oil, garlic, lemon zest, salt, pepper, and thyme. Add the lemon juice lightly, avoiding excess moisture.
2. Shape the pastry
Place the thawed puff pastry on a lightly floured surface. Cut into 6 rectangles or squares and arrange them on a parchment-lined baking sheet. Lightly score a border about 1 cm (½ inch) from the edge of each piece, taking care not to cut all the way through.
3. Add the Gruyère and asparagus
Sprinkle the grated Gruyère evenly inside each scored border. Arrange the asparagus spears neatly over the cheese, cutting them to fit if necessary. Add Parmesan if desired. Brush the pastry borders with beaten egg for a golden finish.
4. Bake until golden
Bake for 20–25 minutes, or until the pastry is puffed and golden brown, the cheese is bubbling, and the asparagus is tender. Rotate the baking sheet halfway through if your oven heats unevenly.
5. Garnish and serve
Let the tarts cool for 3–5 minutes. Finish with a little fresh lemon zest, thyme, and freshly cracked black pepper. Drizzle with a small amount of honey or balsamic glaze if you enjoy a sweet-savory contrast. Serve warm.
Notes
These Puff Pastry Asparagus and Gruyère Tarts are best served warm, when the pastry is crisp and buttery and the cheese is beautifully melted. A touch of lemon zest brightens the rich Gruyère, making every bite fresh, savory, and delicious.
