For the Cake
- 2½ cups (315 g) all-purpose flour
- 2½ tsp baking powder
- ½ tsp salt
- ¾ cup (170 g) unsalted butter, softened
- 1½ cups (300 g) granulated sugar
- 4 large eggs, room temperature
- 2 tsp vanilla extract
- 1 cup (240 ml) whole milk
- 2 tbsp fresh lemon zest
For the Lemon Curd
- ½ cup (120 ml) fresh lemon juice
- 2 tbsp lemon zest
- ¾ cup (150 g) granulated sugar
- 3 large egg yolks
- ¼ cup (60 g) unsalted butter
- Pinch of salt
For the Raspberry Filling
- 1½ cups (185 g) fresh raspberries
- 2 tbsp granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 tbsp water
For the Frosting
- 1 cup (225 g) unsalted butter, softened
- 4 cups (480 g) powdered sugar
- 2–3 tbsp heavy cream or milk
- 1 tsp vanilla extract
- Pinch of salt
- 1 tbsp fresh lemon juice

- Fresh raspberries
- Lemon slices or curls
- Powdered sugar, optional
Instructions
1. Bake the Cake
- Preheat the oven to 350°F (175°C).
- Grease and line two 8-inch round cake pans with parchment paper.
- Whisk together flour, baking powder, and salt.
- In a large bowl, beat the butter and sugar for 3–4 minutes, until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in vanilla and lemon zest.
- Add the flour mixture alternately with the milk, beginning and ending with the flour. Mix just until combined.
- Divide the batter evenly between the prepared pans.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pans for 10 minutes, then transfer to a wire rack and cool completely.
2. Make the Lemon Curd
- In a saucepan, whisk together lemon juice, lemon zest, sugar, and egg yolks.
- Cook over low to medium heat, stirring constantly, until thick enough to coat the back of a spoon, about 6–8 minutes.
- Remove from the heat and whisk in the butter and salt.
- Transfer to a bowl and cover the surface with plastic wrap.
- Refrigerate until completely chilled.
3. Prepare the Raspberry Filling
- Add raspberries, sugar, and lemon juice to a small saucepan.
- Cook over medium heat for 3–4 minutes, gently crushing some of the berries.
- Mix cornstarch and water in a small bowl.
- Stir the cornstarch mixture into the raspberries and cook for another 1–2 minutes, until thickened.
- Cool completely before assembling the cake.
4. Make the Frosting
- Beat the softened butter until smooth and creamy.
- Gradually add powdered sugar.
- Add vanilla, lemon juice, salt, and enough cream to reach a smooth, spreadable consistency.
- Beat for another 2–3 minutes, until fluffy.
5. Assemble the Cake
- If necessary, level the tops of the cooled cakes with a serrated knife.
- Place one cake layer on a serving plate.
- Spread a thin layer of frosting around the edge to create a border.
- Spread lemon curd inside the border.
- Add the raspberry filling over the lemon curd.
- Place the second cake layer on top.
- Cover the entire cake with a thin layer of frosting and chill for 20–30 minutes.
- Apply the remaining frosting and smooth the sides and top.
6. Decorate
Top with fresh raspberries and lemon curls. Add a light dusting of powdered sugar if desired.
