Description

A raspberry white chocolate mousse jar is a sophisticated individual dessert that features alternating layers of velvet white chocolate mousse and thick raspberry reduction served inside small glass containers or mason jars.   • 2 cups (250 g) fresh or frozen raspberries
  • ¼ cup (50 g) granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water

For the white chocolate mousse

  • 6 oz (170 g) white chocolate, finely chopped
  • ¼ cup (60 ml) whole milk
  • 1½ cups (360 ml) heavy whipping cream, cold
  • 1 tsp vanilla extract
  • Pinch of salt

For garnish

  • Fresh raspberries
  • White chocolate curls
  • Fresh mint, optional

Instructions

  • Make the raspberry sauce: Add raspberries, sugar, and lemon juice to a saucepan over medium heat. Cook for 5–7 minutes, stirring occasionally, until the berries break down.
  • Thicken: Mix cornstarch with water until smooth. Stir into the raspberry mixture and cook for another 1–2 minutes, until thickened. Remove from heat and let cool completely.
  • Melt the white chocolate: Heat the milk until hot but not boiling. Pour it over the chopped white chocolate and let sit for 1 minute. Stir until completely smooth. Let cool to room temperature.
  • Whip the cream: Beat the cold heavy cream with vanilla and a pinch of salt until soft peaks form.
  • Make the mousse: Gently fold about one-third of the whipped cream into the cooled white chocolate mixture. Fold in the remaining whipped cream until smooth and fluffy.
  • Layer the jars: Spoon a layer of raspberry sauce into small serving jars. Add a layer of white chocolate mousse, then repeat the layers.
  • Chill: Refrigerate for at least 2–3 hours, or until the mousse is set.
  • Garnish: Top with fresh raspberries, white chocolate curls, and a small mint leaf if desired.
