Instructions

1. Prepare the peanut butter filling
Mix peanut butter, powdered sugar, melted butter, and vanilla until smooth. Set aside.

2. Make the cookie dough
Preheat the oven to 175°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.

Beat the softened butter, brown sugar, and granulated sugar until creamy. Add the egg and vanilla and mix well.

In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.

Fold in the chocolate chips and chopped Reese’s cups.

3. Assemble the stuffed cookie cake
Press about half of the cookie dough evenly into the prepared pan.

Spread the peanut butter filling over the dough, leaving a small border around the edges.

Cover completely with the remaining cookie dough and gently seal the edges so the filling stays inside.

4. Bake
Sprinkle the remaining Reese’s pieces and chocolate chips over the top.

Bake for 20–25 minutes, until the edges are golden brown and the center looks slightly soft.

Don’t overbake—the cookie cake will continue to firm up as it cools.

5. Cool and serve
Let the cookie cake cool in the pan for at least 20–30 minutes before slicing.

Drizzle with melted chocolate or peanut butter if desired, then cut into wedges and serve.
