For the Salad

  • 1 cup quinoa (any color), rinsed

  • 2 cups water or vegetable broth

  • 1 lb (450 g) Brussels sprouts, trimmed and halved

  • 2 tbsp olive oil

  • Salt & black pepper, to taste

  • 1 red bell pepper, diced

  • ¼ cup dried cranberries or raisins

  • ¼ cup toasted pecans or walnuts, roughly chopped

  • 2–3 green onions, sliced thin

For the Dressing

  • 3 tbsp olive oil

  • 1½ tbsp apple cider vinegar or lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp honey or maple syrup

  • Salt & pepper, to taste


Instructions

1. Roast the Brussels sprouts

  1. Preheat oven to 400°F (200°C).

  2. Toss halved Brussels sprouts with olive oil, salt, and pepper.

  3. Spread on a baking sheet in a single layer.

  4. Roast for 20–25 minutes, shaking halfway, until caramelized and slightly crispy at the edges.


2. Cook the quinoa

  1. In a medium pot, bring quinoa + water/broth to a boil.

  2. Reduce heat to low, cover, and simmer 15 minutes, or until liquid is absorbed.

  3. Fluff with a fork and let cool slightly.


3. Make the dressing

  1. In a small bowl, whisk together olive oil, vinegar, Dijon, honey, salt, and pepper.

  2. Adjust sweetness or acidity to taste.


4. Assemble the salad

  1. In a large bowl, combine quinoa, roasted Brussels sprouts, bell pepper, dried cranberries, nuts, and green onions.

  2. Pour dressing over the salad and toss gently to coat evenly.

  3. Taste and adjust seasoning.

Notes

For extra flavor and texture, top the roasted Brussels sprouts quinoa salad with toasted almonds or pumpkin seeds and a sprinkle of feta cheese. Drizzle with a little extra lemon vinaigrette before serving for a bright, fresh finish.
