For the Salad

1 red bell pepper, diced

¼ cup dried cranberries or raisins

¼ cup toasted pecans or walnuts, roughly chopped

2–3 green onions, sliced thin
For the Dressing

3 tbsp olive oil

1½ tbsp apple cider vinegar or lemon juice

1 tsp Dijon mustard

1 tsp honey or maple syrup

Salt & pepper, to taste
Instructions
1. Roast the Brussels sprouts

Preheat oven to 400°F (200°C).

Toss halved Brussels sprouts with olive oil, salt, and pepper.

Spread on a baking sheet in a single layer.

Roast for 20–25 minutes, shaking halfway, until caramelized and slightly crispy at the edges.
2. Cook the quinoa

In a medium pot, bring quinoa + water/broth to a boil.

Reduce heat to low, cover, and simmer 15 minutes, or until liquid is absorbed.

Fluff with a fork and let cool slightly.
3. Make the dressing

In a small bowl, whisk together olive oil, vinegar, Dijon, honey, salt, and pepper.

Adjust sweetness or acidity to taste.
4. Assemble the salad

In a large bowl, combine quinoa, roasted Brussels sprouts, bell pepper, dried cranberries, nuts, and green onions.
