Ingredients

1 (2–3 lb / 900g–1.3kg) lamb loin, trimmed

3 tbsp olive oil

3 cloves garlic, minced

2 tsp fresh thyme, chopped (or 1 tsp dried)

Zest of 1 lemon

1 tsp Dijon mustard

Salt & pepper, to taste

Optional: 1 tbsp bread crumbs for crust

½ cup dry white wine or chicken stock (for pan sauce)
Instructions
Prep the Lamb

Preheat oven to 400°F (200°C).

Pat lamb loin dry with paper towels.

In a small bowl, mix olive oil, garlic, rosemary, thyme, lemon zest, mustard, salt, and pepper.

Rub mixture all over the lamb. If using, press breadcrumbs onto the top for extra crust.
2. Sear the Lamb

Heat a large oven-safe skillet over medium-high heat.

Sear lamb 2–3 minutes per side until browned.
3. Roast

Transfer skillet to oven (or place lamb in a roasting pan).

Roast 15–20 minutes for medium-rare (internal temp 135°F / 57°C), 20–25 min for medium (140–145°F / 60–63°C).

Tent with foil and let rest 10 minutes before slicing.
4. Make Pan Sauce (Optional)

Remove lamb from skillet; keep warm.

Deglaze pan with wine or stock, scraping up browned bits.

Reduce 2–3 minutes, season with salt & pepper, and drizzle over sliced lamb.
5. Serve

Slice lamb into medallions, arrange on platter with roasted vegetables, and garnish with fresh herbs or lemon wedges.
