- ⅓ cup (110 g) honey
- ¼ cup (50 g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- ½ cup (120 g) plain Greek yogurt or sour cream
- ½ cup (50 g) sliced almonds
For the Honey Glaze
- 2 tbsp honey
- 1 tbsp warm water
- ¼ tsp saffron threads, optional
- 2 tbsp sliced or chopped toasted almonds
Instructions
- Prepare the saffron:
Gently crush the saffron threads between your fingers or with a mortar and pestle. Place them in the warm milk and let them steep for 10 minutes. - Prepare the oven and pan:
Preheat the oven to 350°F (175°C). Grease a 9-inch (23 cm) round cake pan and line the bottom with parchment paper. - Combine dry ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. - Cream the butter and sweeteners:
In a large bowl, beat the softened butter, honey, and sugar for 2–3 minutes until light and creamy. - Add eggs and saffron:
Beat in the eggs one at a time. Add the vanilla and saffron-infused milk, mixing until combined. - Make the batter:
Add the dry ingredients in two additions, alternating with the yogurt. Mix just until combined—don’t overmix. - Add almonds:
Fold in half of the sliced almonds, reserving the rest for the top. - Bake:
Pour the batter into the prepared pan and smooth the top. Sprinkle with the remaining almonds. Bake for 30–38 minutes, or until a toothpick inserted in the center comes out clean. - Make the glaze:
While the cake is warm, mix the honey with warm water. Add saffron if desired. - Finish the cake:
Let the cake cool in the pan for about 10 minutes, then brush the honey glaze over the top. Sprinkle with toasted almonds. - Serve:
Allow the cake to cool further before slicing. Serve slightly warm or at room temperature with tea or coffee.
