  • Author: David Andersson
  • Total Time: 45 mins
  • Yield: 6 tartlets 1x
  • Diet: Vegetarian

Description

These tartlets are miniature pastries filled with a luscious mixture of goat cheese, honey, and optional cream cheese or mascarpone, paired with fresh or dried figs. The tartlets are finished with a sprinkle of flaky sea salt, a drizzle of honey, and fresh herbs like rosemary or thyme. They are the epitome of sweet-savory perfection, with the creamy filling and soft figs contrasting beautifully with the crisp puff pastry.

Ingredients

Scale

For the Tartlets

  • 1 sheet puff pastry (thawed but chilled) or 1 batch shortcrust pastry

  • 45 fresh figs, sliced (or use dried figs rehydrated in warm water/honey)

  • 4 oz (113g) goat cheese (chèvre), softened

  • 23 tbsp cream cheese or mascarpone (optional, for a creamier filling)

  • 12 tbsp honey (plus more for drizzling)

  • 1 tsp lemon zest or orange zest (optional but lovely)

  • 1/4 tsp black pepper (optional but excellent with figs)

  • Pinch of salt

Finishing

  • Flaky sea salt (like Maldon)

  • Honey for drizzling

  • Fresh thyme or rosemary leaves (optional but amazing)

  • Crushed pistachios or walnuts (optional for crunch)

Instructions

  • Prep Pastry

    • Preheat oven to 400°F (200°C).

    • Cut puff pastry into 2–3 inch squares or use a round cutter for circles.

    • Place on lined sheet pan, prick centers with a fork (leave edges unpricked to puff).

  • Make Goat Cheese Filling

    • In a bowl, mix goat cheese, cream cheese (if using), honey, zest, salt, and pepper until smooth.

    • Taste — adjust honey or salt as desired.

  • Assemble Tartlets

    • Spread a small spoonful of cheese filling in the center of each pastry.

    • Top with 1–2 fig slices, gently pressing in.

  • Bake

    • Bake 14–18 minutes, or until pastry is golden and puffed.

    • Cool slightly (5–10 mins).

  • Finish & Serve

    • Drizzle with honey.

    • Sprinkle flaky salt over the figs (important!).

    • Add herbs or nuts if using.

Notes

These Salted-Honey Fig & Goat Cheese Tartlets offer a perfect balance of sweet, salty, and tangy flavors. They make an elegant appetizer or a sophisticated snack for any occasion. For extra flair, drizzle a little more honey on top and garnish with fresh thyme or crushed pistachios before serving.
