Ingredients
For the beef
- 450 g halal beef, thinly sliced against the grain
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp cornstarch
- ½ tsp black pepper
- 1 tbsp cooking oil
For the bok choy
- 500–600 g bok choy, washed and halved or chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, finely minced
- 1 small onion, sliced
- 1 tbsp cooking oil
For the stir-fry sauce
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (use a halal-certified oyster sauce)
- 1 tbsp hoisin sauce, halal-certified if used
- 1 tsp rice vinegar
- 1 tsp honey or brown sugar
- ¼ cup water or halal beef stock
- ½ tsp sesame oil
- ½ tsp cornstarch
Instructions
- Marinate the beef
Combine the sliced beef with soy sauce, sesame oil, cornstarch, and black pepper. Let it sit for 10–15 minutes. - Mix the sauce
Whisk together soy sauce, oyster sauce, hoisin sauce, rice vinegar, honey, water/stock, sesame oil, and cornstarch. - Sear the beef
Heat a large wok or skillet over high heat. Add 1 tbsp oil. Add the beef in a single layer and stir-fry for about 2–3 minutes, until browned. Remove the beef and set aside. - Sauté the aromatics
Add another tablespoon of oil. Add the onion, garlic, and ginger. Stir-fry for 30–60 seconds until fragrant. - Cook the bok choy
Add the bok choy stems first and cook for about 2 minutes. Add the leafy parts and cook another 1–2 minutes, until bright green and just tender. - Bring everything together
Return the beef to the wok. Pour in the sauce and toss everything together for 1–2 minutes, until the sauce thickens and coats the beef and vegetables. - Serve immediately
Garnish with sesame seeds or sliced green onions if desired.

The beef should be halal-certified, and check the labels on oyster sauce, hoisin sauce, beef stock, and other prepared sauces, since formulations can vary.
