  • 4 slices sourdough or country bread
  • 2 tablespoons butter, softened
  • 1 cup shredded mozzarella cheese

For the Shakshuka Filling

  • 1 tablespoon olive oil
  • ½ small onion, finely diced
  • ½ red bell pepper, finely diced
  • 2 cloves garlic, minced
  • 1 cup crushed tomatoes
  • ½ teaspoon paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon chili flakes (optional)
  • Salt and black pepper, to taste
  • 2 eggs
  • 2 tablespoons chopped fresh parsley or cilantro

Instructions

  • Heat the olive oil in a skillet over medium heat. Sauté the onion and bell pepper for 4–5 minutes until softened.
  • Add the garlic and cook for 30 seconds until fragrant.
  • Stir in the crushed tomatoes, paprika, cumin, chili flakes, salt, and pepper. Simmer for 5–7 minutes until slightly thickened.
  • Make two small wells in the sauce and crack the eggs into them. Cover the skillet and cook for 4–6 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  • Lightly mash the eggs into the tomato mixture and stir in the chopped parsley.
  • Butter one side of each bread slice.
  • Place two slices of bread, butter-side down, in a clean skillet. Sprinkle each with half of the mozzarella and cheddar cheeses.
  • Spoon the shakshuka filling over the cheese, then top with the remaining cheese. Cover with the remaining bread slices, butter-side up.
  • Cook over medium-low heat for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is fully melted.
  • Let the sandwiches rest for 1–2 minutes before slicing and serving.
