Instructions
1. Prepare the cucumber ribbons
Use a vegetable peeler or mandoline to slice cucumbers lengthwise into long ribbons.
Stop when you reach the seeded center.
2. Make the dressing
Whisk olive oil, lemon juice, Dijon mustard, honey, and black pepper until emulsified.
3. Assemble the salad
Gently toss cucumber ribbons with half of the dressing.
Arrange on a serving platter.
Drape smoked salmon over cucumbers.
Sprinkle with dill, shallot, and capers.
Drizzle remaining dressing over the top.
