Smoked Trout Crostini

  • Author: David Andersson

Description

At its core, a smoked trout crostini recipe is a classic Italian-style open-faced appetizer built upon small slices of toasted or grilled rustic bread. The Italian word crostini translates directly to little toasts, which serves as the ideal crunchy canvas for various savory toppings. In this particular recipe, the crisp bread foundation supports a velvety layer of whipped cream cheese, sour cream, fresh dill, chopped chives, Dijon mustard, and citrus zest.

Ingredients

Scale

For the crostini

  • 1 French baguette, cut into 16 thin slices

  • 2 tablespoons olive oil

  • 1 small garlic clove, optional

For the topping

  • 200 g (7 oz) smoked trout, flaked into bite-sized pieces

  • 115 g (4 oz) cream cheese, softened

  • ¼ cup sour cream or crème fraîche

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest

  • 1 tablespoon fresh dill, finely chopped

  • 1 tablespoon fresh chives, chopped

  • 1 teaspoon Dijon mustard

  • Freshly ground black pepper, to taste

  • Salt, to taste, if needed

For garnish (optional)

  • Thinly sliced cucumber or radishes

  • Extra fresh dill

  • Capers

  • Lemon wedges

Instructions

1. Preheat the oven. Heat the oven to 190°C (375°F). Arrange the baguette slices on a baking sheet.

2. Toast the bread. Brush both sides lightly with olive oil. Bake for 8–10 minutes, turning once, until golden and crisp. If desired, rub the warm slices gently with a cut garlic clove. Allow to cool slightly.

3. Prepare the creamy spread. In a bowl, mix the softened cream cheese, sour cream, lemon juice, lemon zest, Dijon mustard, chopped dill, chives, and black pepper until smooth and creamy.

4. Prepare the trout. Gently flake the smoked trout into small pieces, removing any skin and bones. Check carefully for any remaining pin bones.

5. Assemble the crostini. Spread a spoonful of the cream cheese mixture over each toasted baguette slice. Top with pieces of smoked trout.

6. Garnish. Add a few capers, cucumber or radish slices, and fresh dill. Finish with a small squeeze of lemon juice if desired.

7. Serve. Arrange the crostini on a serving platter and serve immediately while the bread is crisp.

Notes

Smoked Trout Crostini combines smoky, savory fish with tangy lemon-herb cream cheese and crunchy toasted bread for a sophisticated appetizer that is simple to prepare and full of flavor.
