- 2 tsp onion powder
- 1 tsp black pepper
- 1½ tsp kosher salt
- 1 tsp ground cumin
- ½ tsp cayenne pepper (optional)
- 1 cup apple cider (for moisture while smoking)
For the Apple Cider BBQ Sauce
- 1 cup apple cider
- 1 cup ketchup
- ¼ cup apple cider vinegar
- ¼ cup brown sugar
- 2 tbsp molasses
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp black pepper
- Pinch of salt
Instructions
1. Prepare the Turkey Legs
- Pat the turkey legs dry with paper towels.
- Rub them with olive oil.
- Mix the brown sugar, smoked paprika, garlic powder, onion powder, salt, pepper, cumin, and cayenne.
- Coat the turkey legs evenly with the seasoning mixture.
- Let them rest for at least 30 minutes (or refrigerate overnight for deeper flavor).
2. Smoke the Turkey Legs
- Preheat the smoker to 250°F (120°C).
- Place the turkey legs on the smoker grates.
- Smoke for 3–4 hours, or until the internal temperature reaches 165°F (74°C) near the bone.
- Brush occasionally with apple cider to keep the meat moist.
3. Make the Apple Cider BBQ Sauce
- Add apple cider, ketchup, vinegar, brown sugar, molasses, Worcestershire sauce, Dijon mustard, and seasonings to a saucepan.
- Simmer over medium-low heat for 15–20 minutes, stirring occasionally, until slightly thickened.
4. Glaze and Finish
- During the last 20–30 minutes of smoking, brush the turkey legs generously with the apple cider BBQ sauce.
- Continue cooking until the glaze becomes sticky and caramelized.
5. Serve
- Let the turkey legs rest for 10 minutes before serving.
- Serve with extra apple cider BBQ sauce on the side.
