- 3 cups (375 g) all-purpose flour, plus extra for dusting
Baking Soda Bath
- 8 cups water
- ⅓ cup baking soda
Topping
- 1 egg, beaten with 1 tablespoon water (egg wash)
- Coarse salt or pretzel salt
- Optional: melted butter for brushing after baking
For the Warm Cheese Dip
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 teaspoon Dijon mustard (optional)
- ½ teaspoon garlic powder
- ¼ teaspoon paprika
- 2 cups shredded sharp cheddar cheese
- Salt and black pepper, to taste
- Pinch of cayenne (optional)
Instructions
1. Make the Dough
- Combine warm water, yeast, and brown sugar. Let sit for 5–10 minutes until foamy.
- Stir in salt and melted butter.
- Add the flour gradually and mix until a soft dough forms.
- Knead for about 5–7 minutes until smooth and elastic.
- Place in a lightly oiled bowl, cover, and let rise for about 1 hour or until doubled.
2. Prepare the Pretzel Bites
- Preheat the oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Divide the dough into 4 pieces and roll each into a rope about ¾ inch thick.
- Cut into 1-inch bite-sized pieces.
3. Baking Soda Bath
- Bring 8 cups of water to a gentle boil.
- Stir in the baking soda carefully.
- Drop the dough pieces into the water for about 20–30 seconds.
- Remove with a slotted spoon and place on the prepared baking sheet.
4. Bake
- Brush each bite with egg wash.
- Sprinkle with coarse salt.
- Bake for 12–15 minutes, until deep golden brown.
- Brush with melted butter if desired.
Make the Cheese Dip
- Melt butter in a saucepan over medium heat.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the milk until smooth.
- Add Dijon mustard, garlic powder, and paprika.
- Reduce heat to low and stir in the cheddar cheese until melted and creamy.
- Season with salt, pepper, and cayenne if using.
