For the Soufflé Pancakes

  • 2 large eggs, separated

  • Butter or oil, for cooking

  • ½1 tsp rose water, to taste
  • 12 drops pink food coloring, optional

  • 2 tbsp shelled pistachios, finely chopped

  • Powdered sugar, for dusting
  • Fresh berries, optional
  • A drizzle of honey or maple syrup, optional

Instructions

  • Make the batter:
    Separate the eggs. In a bowl, whisk the egg yolks with milk and vanilla. Sift in the flour and baking powder, then mix until smooth.
  • Whip the egg whites:
    In a clean bowl, beat the egg whites with cream of tartar until foamy. Gradually add the sugar and continue beating until you have glossy, stiff peaks.
  • Fold gently:
    Fold one-third of the whipped egg whites into the yolk mixture to loosen it. Gently fold in the remaining egg whites in two additions, being careful not to deflate the mixture.
  • Cook the pancakes:
    Heat a nonstick pan over low heat and lightly grease it. Spoon the batter into tall mounds or use pancake rings. Add a few drops of water to the empty part of the pan and cover with a lid.
  • Steam and flip:
    Cook for about 4–5 minutes on low heat. Carefully flip the pancakes, cover again, and cook for another 3–4 minutes, until puffed and cooked through.
  • Make the rose cream:
    Whip the heavy cream with powdered sugar until soft peaks form. Add rose water and optional food coloring, then whip until lightly thickened.
  • Assemble:
    Stack the soufflé pancakes on a plate. Add a generous spoonful of rose cream, sprinkle with chopped pistachios, and finish with powdered sugar and rose petals.

Notes

Serve the pancakes immediately while they’re warm and fluffy. A drizzle of honey or maple syrup pairs beautifully with the floral rose cream and nutty pistachios.
