Description
This recipe is a clever, no-waste solution designed to turn inactive sourdough starter into a gourmet, baked snack. When you maintain a wild yeast culture, you routinely discard a portion before adding fresh flour and water to keep the environment healthy. While this discarded culture no longer has the robust lifting power needed to rise a heavy loaf of bread, it retains an incredible depth of fermented flavor.
Ingredients
- 1 cup (240 g) sourdough discard
- 1 cup (125 g) all-purpose flour
- 2 tbsp olive oil
- 1 tbsp za’atar
- ½ tsp salt
- 1–2 tbsp water, if needed
- 1 tbsp sesame seeds, optional
- Olive oil spray or extra olive oil for brushing
Instructions
- Make the dough:
In a bowl, mix the sourdough discard, flour, olive oil, za’atar, and salt. Knead gently until a smooth dough forms. Add a little water if the dough feels too dry. - Rest:
Cover and let the dough rest for 15–20 minutes. - Roll thin:
Divide the dough in half. Roll each portion between two sheets of parchment paper until very thin, about 1–2 mm thick. - Season:
Remove the top parchment. Lightly brush the dough with olive oil and sprinkle with extra za’atar and sesame seeds, if using. - Cut:
Use a pizza cutter or sharp knife to cut the dough into small squares or rectangles. Prick each cracker with a fork to prevent puffing. - Bake:
Transfer the parchment to a baking sheet. Bake at 175°C / 350°F for 12–18 minutes, or until the crackers are golden and crisp. Thinner crackers may cook faster. - Cool:
Allow the crackers to cool completely before serving. They will become even crispier as they cool.
Notes
Enjoy these za’atar crackers with hummus, labneh, cheese, olives, or your favorite dip. Store them in an airtight container at room temperature for several days.
