Description
At its heart, a spiced plum & cinnamon cake recipe blends a tender, buttery vanilla batter infused with cinnamon and nutmeg with slices of fresh, juicy plums. As the cake bakes, the plums soften, releasing their sweet-tart juice directly into the surrounding crumb.
Ingredients
For the cake
-
1½ cups (190 g) all-purpose flour
-
½ cup (115 g) unsalted butter, softened
-
¾ cup (150 g) granulated sugar
-
2 large eggs
-
½ cup (120 ml) milk
-
1½ tsp baking powder
-
1½ tsp ground cinnamon
-
¼ tsp ground nutmeg
-
1 tsp vanilla extract
-
¼ tsp salt
-
4–5 medium ripe but firm plums, pitted and sliced
-
1 tbsp lemon juice
For the topping
-
1 tbsp brown sugar
-
½ tsp ground cinnamon
-
1 tbsp sliced almonds (optional)
-
A little powdered sugar, for dusting (optional)
Instructions
1. Prepare the plums
Preheat the oven to 180°C (350°F). Grease and line a 20 cm (8-inch) round cake pan. Wash, pit, and slice the plums. Toss them gently with the lemon juice and set aside.
2. Cream the butter and sugar
Beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
3. Make the spiced batter
In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Add the dry ingredients to the butter mixture in batches, alternating with the milk. Mix just until combined; avoid overmixing.
4. Arrange the plums
Pour the batter into the prepared pan and smooth the surface. Arrange the plum slices on top, gently pressing some into the batter. Sprinkle with brown sugar, cinnamon, and sliced almonds if using.
5. Bake the cake
Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely cover it with foil during the final part of baking.
6. Cool and serve
Let the cake cool in the pan for 10–15 minutes, then transfer it to a wire rack. Dust with powdered sugar if desired. Serve slightly warm or at room temperature.
Notes
For the best flavor, use ripe, juicy plums and freshly ground cinnamon. Serve the cake slightly warm with whipped cream or vanilla ice cream for a delicious treat. Store leftovers in an airtight container to keep the cake moist and flavorful.
