Description

This meal is a complete, nutrient-rich grain bowl that pairs traditional Maghrebi meat preparations with ancient Mediterranean grains. The foundation of the dish relies on cooked farro, an ancient wheat grain prized for its delightfully chewy texture and nutty flavor profile. Mixed into this robust base are slices of pan-seared halal merguez sausage, which release rich, paprika-hued juices that coat the grain.

For the Salad

  • 1 cup (200 g) farro
  • 250 g halal merguez sausage
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, finely sliced
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • ½ cup roasted red peppers, chopped
  • ¼ cup crumbled feta cheese, optional
  • 2 tbsp olive oil

For the Dressing

  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp honey
  • 1 small garlic clove, minced
  • ½ tsp ground cumin
  • ¼ tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

  • Cook the farro:
    Rinse the farro and cook according to the package directions until tender but still slightly chewy. Drain well and allow it to cool.
  • Cook the merguez:
    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the halal merguez sausages and cook for 8–10 minutes, turning occasionally, until browned and cooked through. Slice into bite-sized pieces.
  • Prepare the vegetables:
    In a large bowl, combine the cherry tomatoes, cucumber, red onion, roasted red peppers, parsley, and mint.
  • Make the dressing:
    Whisk together the olive oil, lemon juice, red wine vinegar, honey, garlic, cumin, smoked paprika, salt, and black pepper.
  • Combine:
    Add the cooled farro and sliced merguez to the vegetables. Pour over the dressing and gently toss everything together.
  • Add feta:
    Sprinkle with crumbled feta, if using.
  • Serve:
    Serve immediately or refrigerate for 20–30 minutes to allow the flavors to develop.

Notes

For extra heat, add sliced fresh jalapeños or a pinch of chili flakes. This salad can be served warm or chilled and is excellent for make-ahead lunches and meal prep.
