Ingredients
For the Shrimp & Veggies:

1 lb (450 g) large shrimp, peeled and deveined

1 tbsp olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small red onion, thinly sliced

2 cloves garlic, minced
-
Juice of 1 lime
For the Fajita Seasoning:

1 tsp chili powder
-
1 tsp smoked paprika
-
1/2 tsp ground cumin
-
1/2 tsp cayenne pepper (adjust to taste)

1/2 tsp garlic powder
-
1/2 tsp onion powder
-
1/2 tsp salt
-
1/4 tsp black pepper
Instructions
1. Prep the Shrimp

In a medium bowl, toss shrimp with half of the fajita seasoning and half the lime juice.

Let marinate for 10–15 minutes while prepping the veggies.
2. Cook the Veggies

Heat 1/2 tbsp olive oil in a large skillet over medium-high heat.

Add bell peppers and onion; cook 4–5 minutes, stirring occasionally, until softened and slightly charred.

Add minced garlic and cook for 30 seconds.

Remove veggies from skillet and set aside.
3. Cook the Shrimp

In the same skillet, add remaining olive oil.

Add shrimp and cook for 2–3 minutes per side, until pink and opaque.

Sprinkle with remaining fajita seasoning and lime juice.
4. Combine & Serve

Return cooked veggies to the pan and toss with shrimp until well mixed and heated through.

Taste and adjust salt or spice level if needed.
