Ingredients (Makes about 12 bars)
For the base:

1 cup (150g) medjool dates, pitted

1 cup (100g) rolled oats

½ cup (70g) almonds (or walnuts)

2 tbsp cocoa powder

2 tbsp coconut oil, melted

Pinch of salt
For the tahini caramel:

½ cup (120g) tahini
-
⅓ cup (100g) medjool dates, pitted and soaked in hot water (10 minutes, then drained)

2 tbsp maple syrup (or honey)

1 tsp vanilla extract
-
Pinch of sea salt
For the chocolate topping:

150g dark chocolate, chopped

1 tbsp coconut oil
-
Flaky sea salt, for finishing
Instructions
1. Make the base

In a food processor, blend dates, oats, almonds, cocoa powder, coconut oil, and salt until mixture sticks together when pressed.

Press firmly into a lined 8-inch (20cm) square pan. Chill in fridge while making caramel.
2. Make the tahini caramel

Blend tahini, soaked dates, maple syrup, vanilla, and sea salt until smooth and creamy.

Spread evenly over the chilled base. Return to fridge for 30 minutes to set slightly.
3. Make the chocolate topping

Melt chocolate and coconut oil together (double boiler or microwave in 30-sec bursts).

Pour over caramel layer, tilting pan to spread evenly.

Sprinkle with flaky sea salt.
4. Set & serve

Refrigerate until firm (at least 1 hour).

Cut into bars with a sharp knife (wipe blade between cuts for neat edges).
Notes
For extra indulgence, serve with a drizzle of extra tahini caramel or a scoop of vanilla ice cream. You can also sprinkle some toasted sesame seeds or flaky sea salt on top for added texture and flavor.
