Instructions
1. Make the Crepe Batter
- In a large bowl, whisk together flour, matcha powder, sugar, and salt.
- Add eggs, milk, melted butter, and vanilla extract.
- Whisk until smooth.
- Refrigerate the batter for at least 30 minutes.
2. Cook the Crepes
- Heat a lightly greased nonstick skillet over medium heat.
- Pour about ¼ cup batter into the pan and swirl to coat evenly.
- Cook for 1–2 minutes until set, then flip and cook for 20–30 seconds.
- Transfer to a plate and repeat until all batter is used.
- Allow crepes to cool completely.
3. Prepare the Cream
- Beat heavy cream, powdered sugar, and vanilla until medium-stiff peaks form.
- Keep chilled until ready to assemble.
4. Assemble the Cake
- Place one crepe on a serving plate.
- Spread a thin layer of whipped cream.
- Add a few strawberry slices.
- Repeat with remaining crepes, cream, and strawberries.
- Finish with a crepe layer on top.
5. Decorate and Chill
- Frost the top lightly with remaining cream.
- Garnish with fresh strawberries.
- Dust with matcha powder.
- Refrigerate for at least 2 hours before slicing.
