Description

To truly appreciate the architecture of this showstopping dessert, it helps to understand what makes it so incredibly unique compared to standard baked goods. This cake belongs to a category of desserts known as mille-crepe cakes, a name derived from the French phrase meaning a thousand crepes. While it does not contain quite that many, it relies on stacking dozens of paper-thin pancakes on top of one another, separated by micro-layers of airy frosting.

Ingredients

Scale

For the Matcha Crepes

  • 2 cups (250 g) all-purpose flour
  • 2 tbsp matcha powder
  • 3 tbsp granulated sugar
  • 4 large eggs
  • 2½ cups (600 ml) milk
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Pinch of salt

For the Cream Filling

  • 2 cups (480 ml) heavy whipping cream
  • ¼ cup (30 g) powdered sugar
  • 1 tsp vanilla extract

For Assembly

  • Extra strawberries for garnish
  • 1 tsp matcha powder for dusting

Instructions

2. Cook the Crepes

  1. Heat a lightly greased nonstick skillet over medium heat.
  2. Pour about ¼ cup batter into the pan and swirl to coat evenly.
  3. Cook for 1–2 minutes until set, then flip and cook for 20–30 seconds.
  4. Transfer to a plate and repeat until all batter is used.
  5. Allow crepes to cool completely.

3. Prepare the Cream

  1. Beat heavy cream, powdered sugar, and vanilla until medium-stiff peaks form.
  2. Keep chilled until ready to assemble.

4. Assemble the Cake

  1. Place one crepe on a serving plate.
  2. Spread a thin layer of whipped cream.
  3. Add a few strawberry slices.
  4. Repeat with remaining crepes, cream, and strawberries.
  5. Finish with a crepe layer on top.

5. Decorate and Chill
