Stuffed Medjool Date Truffles

Ultimate Stuffed Medjool Date Truffles Recipe: The Best Healthy Dessert

  • Author: David Andersson
  • Total Time: 30 minutes

  • Diet: Gluten Free

Description

To truly appreciate this sweet creation, we must break down what makes it so incredibly special. At its absolute core, this treat is a clever reimagining of traditional chocolate truffles, using large, plush fruit as a natural vehicle for rich fillings. Instead of relying on a base of heavy dairy cream and white sugar to create a smooth center, we use the naturally honey-like texture of dried fruit to mimic the classic chew of caramel. When you bite into one, you experience distinct structural layers: a crisp outer shell of dark chocolate, a soft and fruity middle layer, and a creamy, savory nut butter core that ties the whole bite together beautifully.

Ingredients

Scale
  • 12 large Medjool dates, pitted
  • ¼ cup almond butter (or peanut butter, cashew butter, or tahini)
  • 12 whole almonds or roasted hazelnuts (optional, for extra crunch)
  • 150 g (5 oz) dark chocolate (70% cocoa), chopped
  • 1 tsp coconut oil (optional, for a smoother coating)

Toppings (choose one or mix)

  • Unsweetened cocoa powder
  • Finely chopped pistachios
  • Toasted shredded coconut
  • Freeze-dried raspberry powder
  • Flaky sea salt

Instructions

  • Slice each date lengthwise without cutting all the way through. Remove the pit.
  • Fill each date with about 1 teaspoon of almond butter.
  • Add a whole almond or hazelnut inside if using, then gently press the date closed.
  • Freeze the stuffed dates for 15–20 minutes.
  • Melt the dark chocolate with the coconut oil in the microwave (20-second intervals) or over a double boiler.
  • Dip each chilled date into the melted chocolate using two forks. Let excess chocolate drip off.
  • Place on a parchment-lined tray and immediately sprinkle with your chosen toppings.
  • Refrigerate for 20–30 minutes, or until the chocolate is firm.

Notes

Store the truffles in an airtight container in the refrigerator for up to 2 weeks or freeze them for up to 3 months for a make-ahead treat.
