Description

At its core, a Sweet Potato Breakfast Hash with Hot Honey is a modern, nutrient-dense twist on the classic American breakfast hash. Traditionally, a hash consists of chopped meat, potatoes, and onions fried together. While the original version is undeniably delicious, it can sometimes feel heavy or one-note. By swapping white potatoes for sweet potatoes, we introduce a lower glycemic index carbohydrate that is packed with Vitamin A and fiber.

Ingredients

Scale
  • 2 medium sweet potatoes (peeled, diced small)
  • 1 tbsp olive oil
  • 1 tbsp butter (optional, for flavor)
  • 1 small onion (chopped)
  • 1 bell pepper (any color, diced)
  • 2 cloves garlic (minced)
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • Salt & black pepper (to taste)
  • 24 eggs
  • Fresh parsley or cilantro (for garnish)

🔥 Hot Honey:

  • 3 tbsp honey
  • 1/21 tsp chili flakes (adjust to spice level)
  • 1 tsp apple cider vinegar (optional, for tang)

Instructions

1. Make the hot honey

  • In a small pan, gently warm honey with chili flakes (don’t boil).
  • Stir in apple cider vinegar.
  • Set aside.

2. Cook the sweet potatoes

  • Heat olive oil in a large skillet over medium heat.
  • Add diced sweet potatoes.
  • Cook for 10–15 minutes, stirring occasionally, until soft and slightly crispy.

3. Add veggies

  • Add onion and bell pepper.
  • Cook 5–7 minutes until softened.
  • Stir in garlic, paprika, cumin, salt, and pepper.

4. Add eggs

  • Make small wells in the hash.
  • Crack eggs into the wells.
  • Cover and cook until eggs are done to your liking.

5. Finish

  • Drizzle hot honey over the top.
  • Garnish with fresh herbs.

Notes

This sweet potato hash is the perfect balance of sweet, savory, and a little heat. It’s a cozy, satisfying breakfast that’s just as great for brunch or even a quick dinner.
