🔥 Hot Honey:
- 3 tbsp honey
- 1/2–1 tsp chili flakes (adjust to spice level)
- 1 tsp apple cider vinegar (optional, for tang)
Instructions
1. Make the hot honey
- In a small pan, gently warm honey with chili flakes (don’t boil).
- Stir in apple cider vinegar.
- Set aside.
2. Cook the sweet potatoes
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes.
- Cook for 10–15 minutes, stirring occasionally, until soft and slightly crispy.
3. Add veggies
- Add onion and bell pepper.
- Cook 5–7 minutes until softened.
- Stir in garlic, paprika, cumin, salt, and pepper.
4. Add eggs
- Make small wells in the hash.
- Crack eggs into the wells.
- Cover and cook until eggs are done to your liking.
5. Finish
- Drizzle hot honey over the top.
- Garnish with fresh herbs.
