Description

A paleta is a traditional Mexican frozen pop made from real whole fruit, fresh fruit juice, milk, or cream. Unlike mass-produced artificial popsicles that rely heavily on artificial flavorings, high fructose corn syrup, and synthetic dyes, an authentic paleta focuses on natural, vibrant ingredients.


Ingredients

  • 4 cups (600 g) fresh pineapple, chopped
  • ¼ cup (60 ml) fresh lime juice
  • 23 tbsp honey or agave syrup
  • ½ tsp chili powder
  • ¼ tsp cayenne pepper, or to taste
  • ¼ tsp salt
  • ½ cup (120 ml) coconut water or regular water
  • 1 tbsp Tajín or chili-lime seasoning, for garnish
  • Lime wedges, for serving

Instructions

  • Blend: Add the pineapple, lime juice, honey, chili powder, cayenne, salt, and coconut water to a blender. Blend until smooth.
  • Taste: Adjust the sweetness, lime, and chili according to your preference. For a stronger spicy kick, add a little extra cayenne.
  • Fill molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  • Insert popsicle sticks and freeze for 5–6 hours, or preferably overnight, until completely solid.
  • Release: Run the outside of the molds briefly under warm water, then gently pull out the paletas.
  • Finish: Sprinkle with Tajín or another chili-lime seasoning and serve immediately with fresh lime wedges.

Notes

For a chunkier paleta, reserve a small amount of finely diced pineapple and stir it into the blended mixture before freezing. The combination of sweet pineapple, tangy lime, and spicy chili creates the perfect sweet-and-spicy (“swicy”) flavor.
