  • Beef tallow (for frying)
  • 12 tbsp truffle oil
  • ¼ cup grated Parmesan cheese

Instructions

🔪 Step 1: Prep the Potatoes

  1. Wash and peel (optional) the potatoes.
  2. Cut into even fries (about ¼-inch thick).
  3. Soak in cold water for 30–60 minutes to remove excess starch.
  4. Drain and pat completely dry.

♨️ Step 2: First Fry (Blanching)

  1. Heat beef tallow to 300°F (150°C).
  2. Fry potatoes in batches for 4–5 minutes (they should be soft but not browned).
  3. Remove and let them rest on paper towels.

  1. Increase tallow temperature to 375°F (190°C).
  2. Fry again for 2–3 minutes until golden and crispy.
  3. Remove and drain excess fat.
