Ingredients
Meatballs
1 lb ground meat (beef, chicken, turkey, or pork)
½ cup breadcrumbs or panko
1 large egg
2 tbsp soy sauce (or tamari)
1 tsp grated ginger
1 tsp garlic, minced
½ tsp black pepper
Teriyaki Pineapple Sauce
½ cup teriyaki sauce (store-bought or homemade)
½ cup pineapple chunks (fresh or canned, drained)
2 tbsp pineapple juice
1 tsp cornstarch + 1 tbsp water (slurry)
Bowls
Cooked jasmine rice or brown rice
Steamed broccoli or snap peas
Shredded carrots
Sliced green onions
Sesame seeds
Instructions
1. Make the Meatballs
Preheat oven to 400°F (205°C) or heat a skillet.
Mix all meatball ingredients until just combined.
Roll into 1½-inch meatballs.
Bake 15–18 minutes or pan-sear until cooked through.
2. Make the Sauce
In a saucepan over medium heat, combine teriyaki sauce, pineapple chunks, and pineapple juice.
Simmer 3–5 minutes.
Stir in cornstarch slurry and cook until thickened and glossy.
3. Assemble the Bowls
Add cooked meatballs to the sauce and toss to coat.
Serve over rice.
Top with veggies, green onions, and sesame seeds.
