Flaky Halal Chicken Pot Pie Galette

The Ultimate Flaky Halal Chicken Pot Pie Galette Recipe

  • Author: David Andersson
  • Total Time: 1 hour 5 minutes
  • Yield: 6 servings 1x

Description

Before we fire up the stovetop, let us unpack what this dish actually is. A galette is a term used in French cuisine to describe various types of flat, round, or free-form crusty cakes. Unlike a standard pie that requires a specific deep-dish pan and meticulous crimping around the edges, a galette is shaped completely by hand on a flat baking sheet. You simply roll out the dough, pile your fillings high right in the middle, and fold the edges inward to create a beautiful, organic border. It is beautifully imperfect, meaning you do not have to worry about your pastry looking flawless before it goes into the oven.

Ingredients

Scale

For the Crust

  • 1¼ cups (160 g) all-purpose flour
  • ½ tsp salt
  • ½ cup (115 g) cold unsalted butter, cubed
  • 34 tbsp ice water

For the Filling

  • 2 cups cooked halal chicken breast, diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 2 tbsp all-purpose flour
  • ¾ cup chicken broth (halal)
  • ¼ cup heavy cream
  • 1 tsp dried thyme
  • ½ tsp dried parsley
  • ½ tsp salt
  • ¼ tsp black pepper

For Assembly

  • 1 egg, beaten (for egg wash)
  • 1 tbsp milk
  • Fresh parsley, chopped (optional)

Instructions

Make the Crust

  1. In a large bowl, combine flour and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add ice water one tablespoon at a time until the dough comes together.
  4. Form into a disk, wrap, and chill for 30 minutes.

Prepare the Filling

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion for 3–4 minutes until softened.
  3. Add garlic and carrots; cook for 5 minutes.
  4. Stir in flour and cook for 1 minute.
  5. Gradually whisk in chicken broth and cream until smooth.
  6. Add thyme, parsley, salt, and pepper.
  7. Stir in chicken and peas. Simmer for 3–4 minutes until thickened.
  8. Remove from heat and allow the filling to cool slightly.

Assemble and Bake

  1. Preheat oven to 400°F (200°C).
  2. Roll the dough into a 12-inch circle on a lightly floured surface.
  3. Transfer to a parchment-lined baking sheet.
  4. Spoon the filling into the center, leaving a 2-inch border.
  5. Fold the edges of the dough over the filling, pleating as needed.
  6. Mix the egg and milk, then brush over the crust.
  7. Bake for 35–40 minutes, or until the crust is golden brown.
  8. Let rest for 10 minutes before slicing.
  9. Garnish with fresh parsley if desired and serve warm.
